Souplantation Copycat Wild Blueberry Muffins
The news of Souplantation not reopening is sad for only one reason: not being able to devour an endless buffet of Wild Blueberry Muffins. Throw in some Honey Butter and nothing else was this important at the buffet.
Ingredients
- 2 lbs. all-purpose flour
- 7 oz. wheat flour
- 4 ½ tbsp. baking powder
- 2 tsp. kosher salt
- 1 ¼ lbs. granulated sugar
- 4 cups buttermilk
- 6 oz. eggs
- 2 cups vegetable oil
- 1 tbsp. blueberry extract
- 1 ½ lbs. frozen blueberries
Directions
- Combine all dry ingredients until evenly mixed and set aside.
- Combine all wet ingredients and mix on medium speed.
- Finally, carefully fold the frozen blueberries into the batter.
- Pour the batter into muffin tins and bake at 350 degrees Fahrenheit for 15 minutes.
- Top with your favorite whipped butter.
