Souplantation Copycat Wild Blueberry Muffins

The news of Souplantation not reopening is sad for only one reason: not being able to devour an endless buffet of Wild Blueberry Muffins. Throw in some Honey Butter and nothing else was this important at the buffet.

Ingredients

  • 2 lbs. all-purpose flour
  • 7 oz. wheat flour
  • 4 ½ tbsp. baking powder
  • 2 tsp. kosher salt
  • 1 ¼ lbs. granulated sugar
  • 4 cups buttermilk
  • 6 oz. eggs
  • 2 cups vegetable oil
  • 1 tbsp. blueberry extract
  • 1 ½ lbs. frozen blueberries

Directions 

  • Combine all dry ingredients until evenly mixed and set aside.
  • Combine all wet ingredients and mix on medium speed.
  • Finally, carefully fold the frozen blueberries into the batter.
  • Pour the batter into muffin tins and bake at 350 degrees Fahrenheit for 15 minutes.
  • Top with your favorite whipped butter.
