
Festive and fun, these Chocolate Gingerbread Men Cookies will bring holiday cheer to you and your family.
Chocolate Gingerbread Men Cookies

Ingredients
- 2 cup (240 g) flour
- 1 tbsp baking powder
- ¼ cup (25 g) Cocoa powder ½ cup (113 g) butter
- ¼ cup (50 g) sugar
- ¼ cup (55 g) brown sugar
- ¼ cup (85 g) molasses
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp cinnamon powder
- 1 tbsp ginger powder
- Pinch of salt
- ½ cup (85 g) chocolate chips
- 12-24 candy canes or Red & white fondant (to make Candy cane)
For Royal Icing
- 1 egg white
- 3 tbsp lemon juice
- 1 + 1/3 cup (175 g) powdered sugar
Directions
1. Pre-heat the oven to 175 C / 347 F
2. Beat the sugar, brown sugar, cinnamon powder, ginger powder, and butter in mixer.
3. Microwave the chocolate chips in total for 2 minutes but in 10 seconds intervals.
4. When the mixture is combined well add the egg, molasses, melted chocolate and vanilla extract. Continue to mix.

5. Sift the flour, cocoa powder, baking powder, and pinch of salt into another bowl.
6. Then add the dry ingredients to the mixture and continue to mix.

7. When it becomes a dough, take it out and put on a stretch film and rest in the fridge for 30 minutes.

8. After, take out the dough and roll out to 2 cm thick.
9. Cut Gingerman shape into the rolled dough.
10. Place them on a baking tray, shape their hands like holding a candy cane and if you want you can stick together with a toothpick.
11. Cook for 10 minutes in the oven.

12. For the royal icing, mix the egg white, and powdered sugar first.
13. Then add the lemon juice for your desired consistency (It shouldn’t be too thick).
14. Take out the cookies from the oven and rest for 10 minutes to cool down.
15. After it cooled down, decorate the Gingerman with royal icing.
16. Place the candy canes in the gingermans’ hands.
17. If you don’t have ready-made candy canes, you can make with sugar pastes. (Combine the red and white fondant and turn around and give the shape.)

Serve and enjoy
Let the icing set completely, a few hours, then store in an airtight container.
