Blueberry Cream Cheese Cookie Bars

What makes this dessert particularly perfect is that it easily serves a crowd. The recipe yields a whopping 12 to 18 bars depending on how large or small you slice your bars. There is plenty to go around — even if a few extra people decide to show up unannounced. You might find yourself doubling the recipe for a larger batch. They are that good!

  • Preheat the oven to 350 degrees.
  • Line a 9×13” baking dish with parchment paper, or lightly coat with cooking spray.
  • Crush the graham crackers and combine them with melted butter and the 2 tbsp of sugar.
  • Dump the graham crackers into the parchment paper lined baking dish.
  • Press the graham crackers into the dish.

Helpful Tip: I used a small glass or cup to firmly press the crumbs into a crust.”

  • In a second bowl, combine the flour, salt, and baking powder. Set it aside.
  • In a third bowl combine ¾ cups of sugar and 1 stick of softened butter. Beat on medium speed until creamy. Add in the egg and the vanilla and mix for 1 minute.
  • Add the flour mixture, dumping in half, blending and adding the remaining flour mixture in parts.
  • Spread this dough over the graham crackers, by the spoonful, flattening the dough, with the spoon, as you go.
  • In a fourth bowl, combine the cream cheese and the ½ cup blueberries. Blend until well combined.
  • Spread the fruit and the cream cheese over the cookie dough layer.
  • Sprinkle the white chocolate chips over the fruit and cream cheese layer.
  • Sprinkle ½ cup of blueberries over the top.
  • Drizzle with ½ cup of sweetened condensed milk.
  • Bake for 35 minutes.
  • Allow to cool on the counter for approx. 90 minutes.
  • Place the baking dish in the fridge for 4 hours, or the freezer for 1 hour before cutting.
