Celebrate Summer!

I always enjoy baking up special treats for my grandkids for holidays, special occasion or just when they need a quick cheer up to their day.

These Happy Summer Sunshine Cupcakes are so much fun, easy to make, and perfect for summer birthday parties.

Ingredients

• 1 box yellow cake mix + additional ingredients per directions OR your favorite recipe
• Candy corn 8-10 pieces per cupcake
• Sugar decorating eyes 2 per cupcake
• Orange cookie or regular frosting

Lemon Buttercream Frosting (in piping bag with large cut tip)

• 1 stick unsalted butter, room temp
• 4 ½ cups powdered sugar
• 2 ½ tablespoons fresh lemon juice
• 2 tablespoons heavy cream
• 2 teaspoons lemon juice
• Pinch salt
• Just a touch of yellow and orange food coloring swirled in lightly

Tip: If you do not have a piping bag, a plastic sandwich bag can be used instead.

Instructions

Bake cupcakes per recipe and cool completely

Prepare buttercream by beating butter until smooth then adding remaining ingredients in until well combined

Pipe frosting on cupcakes in a flat swirl pattern

Place candy corn tip side out all around the outer edge of the cupcake

Place sugar eyes in the center opening

Use the orange frosting to create a smile
